Raisin Cookie Recipe and White Chicken Chili

Here is the recipe for the Raisin Cookies that we served at Glenda's funeral...
Boiled Raisin Cookies
Boil 1 1/2 cups raisins in 1 cup of water until dry.
Cream:  1 cup shortening and 1 heaping cup sugar
Add: 1/2 tsp salt, 1 tsp soda, 1 tsp baking powder, 3 cups flour, 3 beaten eggs, 1 tsp. vanilla.
Mix, then add raisins last.  Roll into balls and roll in powdered sugar. 
Bake at 375 for 12-15 minutes.  DON'T OVERBAKE!!  I start checking them at 10 minutes because my oven bakes hot.  They just need to be golden brown on top. 
Also, don't make them too large!! 
 Easy and SO GOOD!!!
 
White Chicken Chili
Ingredients:
1 pound of Chicken
1 medium white onion
1 1/2 tsp garlic powder
1 TBS vegetable oil
2 cans of great northern beans--drained and rinsed
1 (14 oz) can of chicken broth
2 small cans chopped green chiles
1 tsp salk
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp blakc pepper
1/4 tsp cayenne pepper (ground red pepper)
1 cup sour cream
1/2 cup heavy whipping cream
Directions:  Saute chicken and onions in vegetable oil
In a large pot combine chicken, onions, beans, broth, chili's and seasonings
Bring to a boil, reduce to simmer for 30 minutes
take off heat and add sour cream and whipping cream
ENJOY!!
(I always double the recipe)
Also...if you don't like a bite of spice then leave out one of the cans of chili's.
