Turkey/Chicken Wild Rice Soup
Yields 10-12 servings
2-4 stalks of celery
1 medium onion, chopped
2 carrots, diced
1/2 cup butter or marg.
1/2 cup all purpose flour
2 cups diced cooked turkey/chicken
1 tsp. dried parsley
6 cups broth
1 pkg. Uncle Bens long grain wild rice (prepare as directed)
2 cups heavy cream
1/2 tsp. salt
1/4 tsp. pepper
In a large kettle or dutch oven saute the onion, celery and carrots in the butter. Next: Blend in flour and cook til bubbly. Gradually add chicken broth, stirring constantly. Bring to boil. Boil for 1 minute. Reduce heat. Add wild rice, cream, meat, parsley, salt and pepper. Simmer for 20 minutes.
